Equipment

Ninja Speedi
Square metal cake pan 8 inch, must fit in speedi
food processor or blender optional but easier than whisking manually

Ingredients

1/3 cup clarified butter melted
1/2 cup sugar
1 egg
3/4 cup milk kefir
1 1/2 tsp vanilla extract
2 cup pancake mix krusteaz buttermilk or other "just add water" mix
2 cup cold water

Instructions

mix sugar and melted butter
add kefir, egg, and vanilla and whisk or blend in food processor or blender
gently combine with pancake mix. do not over mix. batter will be thick
pour batter into greased square 8-inch pan
add cold water to ninja speedi pan
place tray in lower position in speedi and cake pan on tray
set speedi to "steam and bake" at 315 for 17 minutes. do not preheat
when cycle completes, remove cake from speedi and cool completely at room temperature
