Chocolate Cake

Ingredients
  

  • 1/4 cup clarified butter melted
  • 6 tbsp cocoa powder
  • 1 cup sugar
  • 1/2 cup milk kefir
  • 1 egg
  • 1/2 cup water boiling
  • 1 cup pancake mix krusteaz buttermilk or other "just add water" mix
  • 1 tsp vanilla extract
  • 2 cups cold water

Instructions
 

  • dissolve cocoa powder into melted butter
  • slowly mix in sugar
  • add egg and milk kefir and whisk or blend in food processor or blender
  • gently stir liquid into pancake mix
  • gradually stir in boiling water
  • stir in vanilla
  • pour batter into greased 8 or 9 inch round cake pan
  • add cold water to ninja speedi pan
  • place tray in lower position of speedi and place cake pan on tray
  • set speedi to "steam and bake" 315 degrees 17 minutes and start

Notes

This recipe is based on the "Perfectly Chocolate Cake" recipe printed on the Hershey's Cocoa tin and the "Everyday Birthday Cake" recipe from the Ninja Speedi manual and cookbook.  For a lighter cake substitute egg whites for the egg, whip them to soft peaks, and gently fold them into the batter at the very end of making the batter.
